Sunshine food
A slower-paced, sunny weekend, made me think of holidays in Italy. Inspired, I sprang into action – English sunshine doesn’t hang around. Here are two ways to taste Italy quicker than you can say, ‘how long is it until our next holiday?’
Ultimate Italian ciabatta
Stuff a large ciabatta roll with buffalo mozzarella, roasted cherry tomatoes (See Britalian Tip), rocket, Parma ham and shavings of Parmigiano-Reggiano. Drizzle with olive oil, season with salt & pepper and top with a squeeze of honey.

Roasted tomatoes, give a delicious, sweet flavour, however looking for the speediest way to assemble this gorgeous sarnie and get back to the sunshine, I used lovely SunBlush tomatoes – a great instant alternative.

Instant summer fruits ice-cream
Place 500g frozen summer fruits, 125g mascarpone and 4tbsp honey or golden syrup into a food processor. Blitz and serve! Serve with extra honey or golden syrup (optional). Decorate with a sprig of mint (again optional – but I couldn’t resist!)
